Coffee cake is so good. It is one of those desserts that can make your whole day better. I love it so much. I could easily eat this everyday.
Here is a super easy recipe. Use Pamela’s GF mix or Bisquick.
SERVES 6
Ingredients:
DOUGH
2 cups Pamela’s Gluten Free Baking mix OR Bisquick
2/3 cup milk
1 egg
2 tablespoons sugar
TOPPING
1/3 cup Pamela’s Ultimate Gluten-Free Baking and Pancake Mix OR Bisquick
1/3 cup brown sugar
1/4 teaspoon ground cinnamon
2 tablespoons melted butter
Directions
1 Preheat oven to 400 degrees.
2 Grease a deep pie plate, 8″x8″ square pan, or 9″x9″ square pan.
3 Mix dough incredients and put in baking dish.
4 Mix topping ingredients with a fork or pastry mixer until crumbly. Add more “flour” if the topping seems too wet, 1 T at a time.
5 Spread topping mix over dough and drag a butter knife across like you were making a tic-tac-toe board several times.
6 Bake for 25 minutes.
Serve with COFFEE and enjoy!
Hope you like this as much as I do. Even though this is kind of an adult dessert, my daughter likes it very much. All I really did was take the traditional bisquick recipe and replace the bisquick with Pamela’s, and added a couple minor tweaks.
